TOMATO RELISH

4 lbs tomatoes

4 large onions

Pour boiling water over the tomatoes to split the skins and peel cut up onions and add to tomatoes. Sprinkle 1 TBSP salt over the mixture and leave overnight.

Drain and add

1 LB sugar and vinegar to cover and boil until soft

add

1 TBSP mustard

1 TSP curry powder

1 TSP of the following:

Mace, pepper, cloves, nutmeg, cinnamon, ginger

Thicken with a flour paste

MUMS CHOCOLATE PUDDING

1 cup flour

¾ cup sugar

2 TBSP cocoa

2 TSP baking powder

Pinch slat

Sift above into a bowl.

Add

½ cup sultanas

Mix together and add

2 TBSP melted butter

¾ cup milk

Sprinkle over the top of the dough

3 TBSP cocoa

½ cup brown sugar

Carefully pour over the top ¾ cup boiling water (use a spoon to pour the water onto)

Put is a basin of water cook 40 – 60 mins at 350

Microwave chocolate pudding

As above and cover with glad wrap and cook in microwave for 10 -15 mns

EASY PEESEY CHOCOLATE CAKE

Basic mixture              1 +1/2

1 ¾ cup flour               3

2 cups sugar                3         

¾ cocoa                       1

2 tsp baking soda        3

1 tsp baking powder   1 1/2

Pinch salt

2 eggs                          3

2 TSP vanilla essence  3

1 cup coffee                1 1/2

1 cup milk                   1 1/2

½ oil                            ¾

But all ingredients into a food processor mix well

Bake for 1 ½ hrs at 180

Fruit Cake

1 large pkt fruit mix

1 ½ ups sultanas

1 cup butter

2 cups dark brown sugar

1/12 cups water

½ sherry

4-5 eggs Beaten

Juice of 1 lemon

3 TBSP thick marmalade

4 TSP baking soda

2 cups self raising flour – or 2 cups plain flour with 2 TSP baking powder added

2 cups flour

½ TSP mixed spice

½ TSP cinnamon

1 TPSB golden syrup

Place all ingredients except flour prices and eggs into a pot and bring to the boil and simmer for 7 mns stirring frequently. Allow to cool

Add

Beaten eggs and dry ingredients

Bake 2 -2 ½ hours at 350
