TOMATO RELISH

4 lbs tomatoes

4 large onions

Pour boiling water over the tomatoes to split the skins and peel cut up onions and add to tomatoes. Sprinkle 1 TBSP salt over the mixture and leave overnight.

Drain and add

1 LB sugar and vinegar to cover and boil until soft

add

1 TBSP mustard

1 TSP curry powder

1 TSP of the following:

Mace, pepper, cloves, nutmeg, cinnamon, ginger

Thicken with a flour paste
